It’s been getting warmer and warmer here in Phoenix and I think its the perfect weather to be sipping on a refreshing blueberry thyme champagne cocktail! I picked up some gorgeous blueberries from the farmers market a couple of days ago and I really wanted to incorporate them into a drink. Luckily my mom-in-law sent us a chocolate Easter basket complete with a bottle of Prosecco so it was meant to be!
This drink is so easy to make and it tastes delicious… it’s the perfect mix of crisp and sweet. I tested the recipe a couple of times before I got the ratios juuuuust right. To top it off I added a little bit of edible gold foil to the glass rim to make it extra ~fancy~. I can see serving these at a special Brunch or Bridal shower 🙂
Blueberry Thyme Champagne Fizz
I loved making this recipe! It was my first time making flavored syrup and honestly it was so easy! I don’t know why I never tried it before. I used these cute blue champagne flutes from Anthropologie 🙂

Blueberry Syrup:
– 1/3 cup Blueberries (plus more for garnish!)
– 1/3 cup Organic Cane Sugar
– 1/3 cup Water
Garnish:
– 4 Sprigs of Thyme
– Optional: Edible Gold Flakes
Bubbles:
– 1 Bottle of Prosecco or Champagne

- In a small saucepan, bring the blueberries, sugar and water to a boil. Simmer for 10 minutes.
- Strain the blueberries and let the syrup cool.
- Optional: While you’re waiting, you can line the rim of the glass with the edible gold flakes.
- Once the syrup is cool, add 1-2 Tbsp to the bottom of the cocktail glass (more if you like a sweeter drink).
- Fill up with some bubbly and garnish with a sprig of thyme! and Enjoy!

You can really use any champagne bottle, it doesn’t have to be expensive. I used Prosecco. The blueberry syrup really makes it tasty, so don’t worry about splurging big bucks on champagne (unless you want to!). One time me and Keal made this delicious rosemary honey sangria with two buck chuck for Christmas. We seriously used $2 wine and offered our masterpiece to his family of wine snobs connoisseurs, and they all loved it!
The edible gold flakes make it fancy enough too! It wasn’t as hard to place them on the rim as I thought. I read a lot of reviews online about it being hard to work with because of how delicate they are… and don’t get me wrong, they are delicate, but with a small pair of tweezers and a little bit of patience you’ll be fine! They stick to any surface easily so you don’t need to moisten the rim.
This is a really fun cocktail if you want to do something special and quick. It will likely become a part of my arsenal of happy hour staples. I’m super excited for our home office to be done so I can have more space to create things, not to mention our patio being next! We’re thinking of throwing an “office party” once it’s done and making a batch of this cocktail for it. This will open so many more possibilities and room for activities! Can’t wait!
