I’ve been on a health craze lately and with October in full swing I wanted to transform my usual kodiak cakes to a more fall friendly breakfast with a protein pumpkin spice waffles recipe.
Going on three weeks since hiring a personal trainer and I’m already hooked. Working out three times a week and eating healthier has really transformed my life. I’m obsessed with protein and have even dubbed myself the “Protein Queen” amongst my friends as I’m always making sure I meet my macros.
I usually have kodiak cakes for breakfast, and if you haven’t heard of them, you my friend, are missing out! They are delicious and easy to make. The perfect excuse to have pancakes or waffles every day without feeling guilty. I know I’ve had them for a week straight and not a pound gained!
I make them into waffles and add chia seeds to boost up my protein intake. In honor of fall and this lovely weather we’ve been having, I wanted to mix things up! My trainer Jess gave me her pumpkin spice pancake recipe and I adapted it to my needs and likes. The results are fall-tastic protein pumpkin spiced waffles that hit the spot and contain 15.5g of protein and only 3g of sugar per serving! Boom!
Protein Pumpkin Spice Waffles
Get your tastebuds ready for fall with these protein packed waffles! These are perfectly spiced, delicious and go great with loads of different toppings. I added crushed lightly candied walnuts, dried apple and light coconut whip. If you’re feeling adventurous (or love spicy food), I found this amazing ghost pepper Vermont maple syrup at Trader Joe’s, it was life changing and went so well with this recipe!

FOR THE WAFFLE:
– 1/4 cup Kodiak Cake Power Cakes Mix
– 1/4 cup Water
– 1 tbsp Chia Seeds
– 1/4 tsp Pumpkin Spice
– 2 tbsp Pumpkin Puree
OPTIONAL TOPPINGS:
– Lightly Candied Walnuts
– Trader Joe’s Crunch Dried Honeycrisp Apples
– Light Coconut Whipped Topping
– Pumpkin Spice Dust
– Organic Maple Syrup or Agave
